Ingredients

3 tangerines or navel oranges

1 C. sugar

1 Pkg. cranberries

1 Pkg. dried apricots.

Preparation

  1. Peel & section one tangerine/orange, reserving fruit & 2 large pieces of zest.
  2. Squeeze enough juice from remaining tangerines/oranges. Add enough water to make 1 cup of juice.
  3. In large saucepan, mix juice and sugar. Boil over medium high heat, stirring to dissolve sugar.
  4. Add cranberries, apricots, tangerine/orange sections & zest. Boil gently, stirring often for 5 to 8 minutes, until cranberries burst and thicken.
  5. Remove zest and cut into small pieces, then return to sauce.
