Ingredients
2 12 oz packages of fresh cranberries
1 cup Grappa
1 orange
1 1/4 cup sugar
Water as needed
Preparation
In a medium sauces pan add both bags of cranberries. Zest entire orange peel over berries.
In a 2 cup measuring cup juice naked orange, will receive 1/3 to 1/2 cup of juice. Add only 3/4 of a cup of Grappa reserve 1/4 for later. Add water to equal 1.5 cups of liquid. Add liquid to berries, add 1 1/4 cups of sugar and stir well.
Bring to a boil for 4 minutes on high then reduce to low heat. Cook till sauce thickens. About 8 minutes. Turn off heat add last 1/4 cup of Grappa stir well and pour into container. Mixture will gel up as it cools. Cool at room tempature then refrigerate till ready to serve.
