Ingredients
1 stick butter, softened
1/3 cup sugar
1/3 cup packed brown sugar
1 egg
1 tsp vanilla
½ cup plus 2 Tbsp flour
½ cup whole wheat flour
½ cup oats
½ tsp salt
½ tsp baking powder
¼ tsp baking soda
½ cup dried cranberries
½ cup white chocolate chips
½ cup chopped pecans
Preparation
Directions:
- Preheat oven to 350°. Grease a baking sheet or line with parchment paper.
- In a small bowl, beat butter and sugars until fluffy.
- Add egg and vanilla, mixing well.
- In a larger bowl, combine flours, oats, salt, baking powder, baking soda, cranberries, white chocolate chips, and pecans.
- Add creamed mixture to dry ingredients and mix by hand.
- Drop by large spoonfuls onto prepared baking sheet; shape into balls and flatten just slightly.
- Bake until edges start to brown maybe around 10 minutes (Do not overbake!)
