Ingredients
1 cup water
1 1/2 cups sugar
1/2 vanilla bean, seeded and scraped
1 large tangerine
4 cups (1 12-ounce package) cranberries
1/4 cup lemon juice
Preparation
Place sugar, water, vanilla (seeds and pod), and the peel of the tangerine in a sauce pot and bring to a boil. Add cranberries and return to a boil. Reduce heat to a simmer and add juice of tangerine and the lemon juice. Simmer for 15 minutes being sure to stir every so often.
Ladle into hot, sterilized canning jars and seal leaving 1/4 inch of space. Before applying the lids, sterilize the lids by placing them in a bowl and pouring boiling water over them. Wipe the rims of the jars clean before applying the lids.
