Ingredients

1 cup water

1 1/2 cups sugar

1/2 vanilla bean, seeded and scraped

1 large tangerine

4 cups (1 12-ounce package) cranberries

1/4 cup lemon juice

Preparation

  1. Place sugar, water, vanilla (seeds and pod), and the peel of the tangerine in a sauce pot and bring to a boil. Add cranberries and return to a boil. Reduce heat to a simmer and add juice of tangerine and the lemon juice. Simmer for 15 minutes being sure to stir every so often.

  2. Ladle into hot, sterilized canning jars and seal leaving 1/4 inch of space. Before applying the lids, sterilize the lids by placing them in a bowl and pouring boiling water over them. Wipe the rims of the jars clean before applying the lids.
