Ingredients

250 g All purpose flour

150 g granulated sugar

2 tsp baking powder

1/4 tsp salt

2 eggs

250 ml milk

60 g unsalted butter

1 tsp vanilla extract

3/4 c cranberries (blueberries)

1 Tbsp lemon zest

Preparation

Sift dry ingredients together Stir liquid ingredients including butter Stir liquid mix into dry ingredients, DO NOT OVERMIX, batter should be lumpy Gently fold cranberries and lemon zest Portion into greased mold or paper lined muffin cups Bake 350F (180C) for 18 min until light brown and set on center Cool on rack in the pan for several minutes before removing.
