Ingredients

2 Cups Flour, sifted

1 Cup Sugar

1 1/2 tsp Baking Powder

1/2 Soda

1 tsp salt

1/4 Cup Shortening

3/4 Cup Orange Juice

1 Tbs Orange Rind, grated

1 Egg well beaten

1/2 C Chopped Nuts

1 C to 1 1/2 C Cranberries Coarsely Chopped

Preparation

  1. Sift together flour, sugar, baking powder, soda, and salt.
  2. Cut in shortening until mixture resembles coarse cornmeal.
  3. Combine orange juice, grated rind, and well beaten egg.
  4. Pour all at once into dry ingredients mixing just enough to dampen.
  5. Carefully fold in chopped nuts and cranberries.
  6. Spoon into greased loaf pan.
  7. Bake at 350 for 60 minutes.
