Ingredients
3 cups rolled oats
2 very ripe medium bananas
1 cup unsweetened applesauce
1/2 cup dried unsweetened cranberries
1/2 cup water
1/4 cup flaxseeds
6 tbsp liquid egg whites
2 tbsp vanilla extract
1 tbsp chia seeds
dash of salt
optional:
1/4 cup thompson raisins (not included in nutritional info above)
Preparation
- Pre-heat the oven to 400 degrees.
- Blend all of the ingredients together until well blended.
- Line a 9 inch x 9 inch baking dish with parchment paper. Note: Use cooking spray to ensure the parchment paper adheres to the dish.
- Spread the mixture evenly in the dish atop the parchment paper.
- Bake for 20-25 minutes or until top is light golden brown.
- Let the pan cool for approximately 15 minutes.
- Cut into squares.
- Store extras in the refrigerator after they fully cool.
