Ingredients
3/4 cup granulated sugar
1/4 cup brown sugar
1/2 cup margarine
1 large egg - optional (As I learned you can leave the egg out of a lot of cookie/cake recipes)
1/2 Tsp. vanilla extract
1/2 Tsp. cinnamon
1/2 Tsp. baking soda
1/2 Tsp. baking powder
1/4 Tsp salt - Optional
1 cup all purpose flour
1 1/2 cup quick cooking oats
3/4 cup dried cranberries (I used sweetened dried cranberries)
1 cup chopped pecans
1 to 1 1/2 cup raisins
Note: You can replace the margarine with 1/2 to 1 cup banana.
Preparation
Preheat oven on 300 degrees.
In a bowl mix togther margarine (or banana, whichever you choose) and sugars. Add in egg and vanilla.
In another bowl, mix togther the dry ingredients. Blend dry ingredients into wet ingredients.
Add oats, cranberries, pecans, and raisins, mix well with a spoon.
Spoon onto cookie sheet.
Bake for 12 to 15 minutes.
