Ingredients
1 egg
grated peel of one orange
2/3 c orange juice
1/4 c oil
2 c flour
3/4 c sugar
2 t baking powder
1/2 t salt
1 c coarsely chopped cranberries
1/4 c chopped pecans
2 t sugar
Preparation
Preheat oven to 400 F. Spray 12 count muffin pan with Pam. In large bowl, blend egg, orange peel, juice and oil; stir in flour, sugar, baking powder and salt until moistened. Stir in cranberries and pecans. Spoon into muffin cups. Sprinkle tops with 2 t sugar. Bake 15-20 minutes or until lightly browned. Cool 2 minutes and remove from pan.
