Ingredients

1-1/2 c all purpose flour

3/4 c sugar

2 tsps baking powder

1/2 tsp salt

1/2 c skim milk

1/4 c vegetable oil

1 tsp grated orange rind

1 egg, lightly beaten

1 c fresh cranberries, coarsely chopped

vegetable cooking spray

Preparation

Preheat oven to 400 degs.

Combine flour, sugar, baking powder and salt in a large bowl. Make a well in center.

Combine milk and next 3 ingredients; stir well. Add to dry ingredients, stirring just until moistened. Gently fold in cranberries.

Divide batter evely among 12 muffin cups coated with cooking spray. Bake at 400 degs for 25 mins or until golden. Remove from pan immediately
