Ingredients
2 c. flour
3 Tbsp. sugar
1/4 tsp. salt
1 Tbsp. baking powder
1/4 c. butter, cubed
1/2 c. cranberries, chopped
1/4 c. pecans, chopped
1/3 c. buttermilk
1/2 tsp. vanilla
Preparation
Combine dry ingredients in a bowl. Cut in butter until it has the consistency of small peas. Add cranberries & nuts.
In a separate bowl, beat the eggs, buttermilk & vanilla. Reserve 1 tablespoon. Add remaining to flour mixture until dough sticks together. Remove to floured board & knead 3-4 times.
Form into 1 in. thick round & cut into 6-8 equal pie slices. Brush with reserved egg mixture & sprinkle with sugar. Bake at 375 degrees for 25 minutes.
