Ingredients
6 green bell peppers
1 cup chopped onion
1/2 cup chopped celery
3 tablespoons butter or margarine
1 1/4 cups cooked rice
1- 1 pound package crawfish, rinsed and drained
1/8 teaspoon cayenne pepper or red pepper
1/4 teaspoon dry mustard
1/4 teaspoon salt
1 teaspoon red hot sauce (optional)
2 slices bacon, cut evenly into 6 pieces
Preparation
Heat oven to 350 degrees F Remove tops, seeds & membranes from peppers. Rinse with water. Bring a large pot of water to a boil; add peppers & boil 3 minutes; drain. Saute onions & celery in butter until vegetables are tender. Remove from heat. In a large mixing bowl, combine sauteed vegetables, rice, crawfish, cayenne pepper, mustard, salt & red hot sauce, if desired. Top with bacon. Place in buttered baking dish 20-25 minutes until bacon is cooked. Remove from oven. Let stand 5 minutes before serving.
