Ingredients

2 pkgs. Tortellini w/Parmesan Cheese, fresh not dried

1 stick butter

1 medium onion, finely chopped

2 cloves garlic, finely chopped

1 pound crawfish tails, thawed and slightly rinsed

1/2-cup Parmesan Cheese

1 pint whipping cream

2 tsp. cornstarch mixed in 1/4-cup cold water

1/8-cup fresh chopped parsley

Salt and Red pepper to taste

Preparation

Prepare tortellini as directed on package. Drain.

In large skillet: sauté onion and garlic in butter until translucent. Add crawfish and cook 5 minutes. Add Parmesan Cheese, parsley, whipping cream and cornstarch mix. Heat until cheese melts and sauce thickens a bit.

Fold tortellini into sauce. Season to taste with salt and red pepper. Pour all into an oiled/sprayed casserole and sprinkle with more Parmesan Cheese. Bake at 375 until hot and bubbly, 20-30 minutes.
