Ingredients

2 bunches fresh broccoli

2 qts chicken stock or chicken flavored bullion for vegetarian

2 cps half and half

4 tbs butter

3 tbs flour

1 small onion

1/4 tsp nutmeg

salt to taste

Preparation

  1. cut broccoli into florets and set aside
  2. cook stems etc. in broth until tender.
  3. remove from broth and puree in blender
  4. make a rue of flour and butter
  5. add broth, nutmeg and seasonings
  6. add pureed broccoli
  7. steam florets just til tender
  8. stir broth mixture til just begins to thicken
  9. add half and half
  10. stir
  11. add florets and serve with crusty bread.
