Ingredients
1 1/2 lbs Oyster Mushrooms
1 1/2 lbs Shitake Mushrooms
1 litre 35% cream (preferably from Harmony Organic Dairy!)
3 Cups Water
2 Cloves Diced Garlic
2 Shallots
1 Onion, diced
1/2 teaspoon black pepper
pinch of salt to taste
1/2 cup olive oil
Fresh herbs (rosemary and thyme)
Preparation
Sauteed onion, shallots and garlic until crisp and browned. Add mushrooms, sauteed until crisp brown.Add cream, water and black pepper. Cook for 15 min on low until it comes to boil. Once cooked, puree with hand blender and return to pot to simmer for anotther five minutes. Serve fresh and hot. Enjoy!
