Ingredients
1 cup cornmeal
3 cups water
2 cups corn kernels (fresh or frozen)
a small handful of chopped fresh basil
3/4 cup soymilk (maybe even a full cup)
1/3 cup nutritional yeast (and more to top your own serving)
salt
pepper
olive oil
Preparation
- Boil water, pour cornmeal and a 1/2 tbsp of olive oil. Stir and reduce heat to low once it begins to thicken and bubble (this will happen rather quickly).
- Add soy milk, corn kernels, basil, salt and pepper, and nutritional yeast (there should be no water left by this step)
- Add more pepper and salt to taste ( i think its best with LOTS of pepper)
