Ingredients
1 1/2 tablespoons unsealed butter
1/2 lb chopped leeks, only white part
1 1/2 tablespoons unbleached all-purpose flour (OPTIONAL)
2/3 cup 1 or 0% milk
1/2 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
2 teaspoons fresh lemon juice (or more to taste)
Preparation
Melt butter in a small saucepan over medium heat. Sauté the leeks until translucent. If you chooae, add the flour and cook for 5 minutes, stirring constantly. Stir for 5 minutes regardless if flour added or not.
Keeping heat on medium, add the milk and continue stirring until the milk thickens and coats the leeks, about 8 to 10 minutes.
Remove from the heat and add the salt, pepper, and lemon juice.
