Ingredients

1 pound spinach

2 Tablespoons butter

1medium onion diced small

salt

1/3 cup heavy cream

1/8 teaspoon nutmeg

Preparation

stem wash and drain 1 pound of spinach

melt 2 tablespoons in a heavy pan over medium heat

Cook diced onion till tender about 7 minutes then add the spinach and cook till just wilted.

If there s a lot of liquid in the pan bunch the spinach to one side, press it to squeeze out as much liquid as possible and pout it off.

Return to pan add salt, nutmeg and 1/3 cup heavy cream cook at a boil till the cream has reduced and thickened around the spinach. Taste for salt and adjust as needed finish with ground pepper
