Ingredients
4 boxes frozen spinach
2 T butter
1 1/2 C fresh mushrooms, sliced
1/2 C heavy cream
1 1/2 C shredded sharp cheddar cheese
4 scallions, chopped
Pinch, nutmeg
Salt & Pepper to taste
Preparation
- Preheat oven to 350 F
- Remove spinach from boxes and defrost completely (either on the stovetop or microwave); drain very well and set aside.
- Melt butter in sauce pan and saute mushrooms.
- Add heavy cream, bring to a simmer.
- Add salt and pepper to cream and mushroom mix, along with a pinch of nutmeg.
- Add spinach to cream, butter, and mushrooms, then put mixture into a casserole dish. Cover with a layer of shredded cheese.
- Bake for 30 minutes or until the dish is hot all the way through and the cheese is bubbling.
