Ingredients

2 T olive oil

1 small shallot, finely chopped

1 box (10 oz) frozen chopped spinach, thawed and drained

salt & pepper to taste

1 t nutmeg

1 t red pepper flakes (or to taste)

4 oz cream cheese, cubed

Asiago or Parmesan cheese, to taste

Cream or half & half

Preparation

Sauté the shallot in olive oil until translucent. Meanwhile, defrost spinach in the microwave according to directions on the box. Add thawed and drained spinach to the pan with shallots, heating through. Add salt, pepper, nutmeg, and red pepper flakes, sauté 1-2 minutes more. Add cream cheese and allow to melt. Add enough cream or half½ to thin the sauce to the consistency you want. Sprinkle with Asiago or Parmesan, mixing to combine. Enjoy!
