Ingredients

10 ounces frozen spinach, defrosted, water pushed out through a seive.

2 slices bacon, chopped

1/2 cup onions, chopped

2 Tablespoons all-purpose flour

1 clove minced garlic

1 cup whole milk

1/4 teaspoon each, salt and pepper

Preparation

In a pan large enough to stir all ingredients, fry bacon and onions together until onions are tender, about 10 minutes. Remove from heat. Add flour, salt, and pepper and garlic. Blend throughly. Slowly add milk, return to heat and stir until thickened. Add spinach and mix thoroughly.
