Ingredients
1 lb fresh spinach, rinsed and trimmed.
2 plum tomatoes, diced
1 small red onion, diced
1/2 lb mushrooms, sliced
1/2 to 3/4 cups grated parmesan cheese
2 tbl unsalted butter
2 tbl all-purpose flour
1/2 to 3/4 cup whole milk, warmed
salt and pepper to taste
ground nutmeg to taste
Preparation
In a large skillet melt butter over medium low heat. Whisk in flour until a nice paste forms. Steadily pour in warmed milk while whisking, until all is well incorporated. Followed by seasonings, and then cheese.
Once all is incorporated and you have a nice cheesey sauce. Toss in fresh spinach, onions, mushrooms and tomatoes.
Stir until well combined and then spoon over chicken cutlets and serve.
