Ingredients

1 pound fresh spinich

3T unsalted butter

1/2 cup heavy cream

1/4 grated nutmeg

1/2t fresh ground black pepper

1 cup onion (chopped fine)

1T flour

2 medium cloves garlic (minced)

1/2 cup bread crumbs

Preparation

Clean spinich thoroughly; simmer in 1/4 cup boiling water until extremely tender (approx. 10 minutes).

Drain spinich completely and allow to cool; chop to desired level.

Melt 2T butter in large saute pan; add onion and garlic until slightly brown.

Slowly stir in heavy cream, flour, and nutmet.

Melt remaining butter slowly in small saute pan; mix in bread crumbs.

When mixture is smooth and hot, add in spinich; toss over medium-low heat (approx. 3-5 minutes).

Sprinkly bread crumb mixture over spinich mixture; serve immediately.
