Ingredients

1/4cup butter

2 onions, chopped

Melt butter in a large wide frying pan that has a tight fitting lid. Add onion and saute until soft, about 5 minutes.

1 garlic clove, crushed

1 T finely minced peeled ginger

2 T curry powder

1/2 tsp salt

1/4 tsp crushed dried chilies

Stir in seasonings and cook over medium heat until flavors have had a chance to mellow and blend, about 5 minutes.

1 pound (500g) frozen white fish

Cut frozen fish into 1.5 inch pieces and add to pan. Cover and cook over medium heat until fish flakes easily with a fork, about 15 minutes. Turn once. Remove cooked fish to a platter and cover to keep warm.

1/2 cup plain yogurt or sour cream

Add yogurt or sour cream to pan and stir until blended. Just heat through and pour over fish.
