Ingredients

one 15.5 oz. can of white shoepeg corn drained

one 15.5 oz can of black beans drained and rinsed

1/2 cup chopped red bell pepper

1/4 cup chopped pickled jalopeno (more or less to taste)

8 oz. cream cheese cut into 4 squares

Corn chips for dipping.

Preparation

Place all ingredients in microproof dish and stir to mix. Set cream cheese squares on top of mixed ingredients. Microwave on high for 1 min. Remove from microwave and stir. microwave for 1 more min. on high. Serve hot using corn chips for dipping.
