Ingredients
250g fettucini pasta
1 cup frozen peas
2 zucchini
3 shallots
1 Tbsp butter
rind of 1 lemon
1/2 cup grated parmesan cheese
1/2 cup cream
pine nuts
salt & pepper
Preparation
- Boil & drain pasta, set aside.
- Melt butter and add sliced shallots, cook until browned.
- Reduce heat, add thawed peas and sliced zucchini (use a vegetable peeler to slice thinnly. Cook for 2 minutes.
- Toss in pasta and lemon rind. Heating through.
- Turn off heat, add cream and Parmesan, stirring quickly. Serve immediately.
- Serve with pine nuts and Salt & Pepper to taste
