Ingredients

250g fettucini pasta

1 cup frozen peas

2 zucchini

3 shallots

1 Tbsp butter

rind of 1 lemon

1/2 cup grated parmesan cheese

1/2 cup cream

pine nuts

salt & pepper

Preparation

  1. Boil & drain pasta, set aside.
  2. Melt butter and add sliced shallots, cook until browned.
  3. Reduce heat, add thawed peas and sliced zucchini (use a vegetable peeler to slice thinnly. Cook for 2 minutes.
  4. Toss in pasta and lemon rind. Heating through.
  5. Turn off heat, add cream and Parmesan, stirring quickly. Serve immediately.
  6. Serve with pine nuts and Salt & Pepper to taste
