Ingredients

Dressing:

1 cup lemon low-fat yogurt

1/3 cup mayonnaise or salad dressing

2 teaspoons lemon juice

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon poppy seeds

Pasta Salad:

2 to 2½ cups (4 ounces) uncooked bow-tie pasta

1 can (10 ounces) premium chunk breast of chicken, drained and flaked

1 can (8 ounces) mandarin oranges, drained

1/2 cup sliced green onion

1/2 cup sliced celery

Preparation Time: Approximately 10 minutes

Cook Time: Approximately 20 minutes

Preparation: For the Dressing: Combine the yogurt, mayonnaise, lemon juice, salt, pepper, and poppy seeds in a small mixing bowl; mix well. For the Pasta Salad: Cook the pasta according to the package directions; drain and rinse under cold water. Combine the pasta, chicken, mandarin oranges, green onion, and celery in a large bowl. Add the dressing; toss to coat. Cover and refrigerate until time to serve. Servings: 4
