Ingredients

3 lbs; sweet potatoes

6 TBL; unsalted butter (softened)

1cup; plain cream cheese (softened)

1cup; sour cream

Kosher Salt (to taste)

Fresh Ground Black Pepper ( to taste)

Preparation

Slit potatoes (3/4 inch deep, 1/2 potatoe’s lenth, on 5 sides).

Brush lightly with melted butter.

Bake in oven @ 375-400 until tender ( approximate 1 hr). Allow to cool.

Separate skin from meal (scoop or peel).

Begin to mash. Slowly add remaining butter, cream cheese and sour cream.. Continue mashing until desired consistency is achieved. Add additional sour cream and cream cheese, if wanted.

Add salt and pepper to taste.
