Ingredients

2 lb. potatos

2 stalks celery, thinly sliced

1 med green pepper, chopped

1/3 cup chopped onion

1 1/4 cup mayo

1 T vinegar

2 tsp. Dijon mustard

1 tsp. salt

1/2 pepper

6 hard boiled eggs, chopped

Preparation

Boil potatos 20-25 min, peel and cube

Combine celery, pepper, onions, mayo, vinegar, mustard, salt and pepper

Add potatoes and eggs admix well.

Cover and chill before serving.
