Ingredients

6 c milk

1 c long grain rice

1/2 c raisins (optional)

1 c heavy cream

3 egg yolks, beaten

2 tsp vanilla

1/4 tsp salt

1/2 c sugar

Preparation

In lg heavy bottomed sauce pan combine milk & rice; bring to boil, reduce heat & simmer 55 min. Combine rest and add to cooked rice mixture. Cook over moderate heat until thick. Pour into bowl, sprinkle lightly with cinnamon, refrigerate or serve warm.
