Ingredients
3 tbsp olive oil
1 onion, coarsely chopped
4 garlic cloves, sliced
1 bunch broccoli rape, chopped
1 cup arborio rice
21/2 cups hot chicken stock
1/4 cup heavy cream
8 oz 1/2 cube fresh mozzarella
Preparation
Heat olive oil in heavy saucepan on medium heat. Add onion and garlic and saute till soft, about 5 minutes.Add broccoli rape and saute till wilted and reduced, about 3 minutes. Add rice and stir until opaque and white in the center, about 3 minutes. Lower heat and add chicken stock one dipper at a time as absorbed by rice, stirring. When all chicken stock has been absorbed, add cream and stir for 2-3 minutes. Toss cubed cheese into rice and take off heat. Salt and pepper to taste and serve.
