Ingredients
2 C (8oz) grated Queso Blanco or Montery Jack cheese
1/3 C mayo
4 oz chopped cooked peeled and deveined shrimp (or chicken)
1/4 C minced green onions
1 chipotle chile in adobo sauce pureed and strained
1 T chopped gresh cilantro leaves
1/2 t grated lime zest
1/4 t ground cumin
salt and freshly ground pepper to taste
3/4 C (3 oz) grated Cotija cheese
1 1/2 dozen large flat tortilla chips
1 1/2 dozen fresh cilantro leaves
Preparation
Preheat broiler. In medium bowl, stir together blanco cheese, mayo, shrimp, onions, chipoltle puree, chopped cilantro, lime zest and cumin. Season with salt and pepper. Spread about 1 T mixture onto each tortilla chip and plaace on a baking sheet. Broil until mixture begins to brown, about 1 minute. Sprinkle each with a generous t Cotija cheese. To serve: Put a cilantro leaf onto each nacho and serve immediately.
