Ingredients
2 T Butter
1 Clove Garlic minced
2 T Flour
½ t Salt
1/8 t Pepper
¾ C Half & Half
1 lb Spinach cooked and drained
Preparation
Melt the butter in a saucepan over low heat. Sauté the garlic for one minute. Blend in the flour to make a roux. Add salt and pepper and heat until the mixture bubbles, stirring constantly. Remove from the heat. Gradually add the half & half. Return to heat and stir until the mixture is smooth and thickened. Blend the well drained spinach into the sauce and serve.
