Ingredients

1 lb cheese tortellini

1/2 c chopped onion

3 cloves garlic minced

2 T olive oil

1 (10 oz) pkg frozen spinach thawed

1 c seeded cubed tomatoes

1/4 c chopped fresh basil

1/2 t salt

1/2 t pepper

1 c whipping cream

1/4 c parmasean cheese

Preparation

Cook pasta and drain. Meanwhile, in a skillet, cook onion and garlic in oil until translucent- approx 4 minutes. Add spinach, tomato, basil, salt and pepper, saute medium heat for 5 minutes. Stir in cream and parmasean cheese and cook until it comes to a boil. Reduce to low heat. Add cooked tortellini, mix well and cook an additional 5 minutes until heated.
