Ingredients
3lb olives
6oz anchovy paste
3/4c capers-rinsed, drained
1/2c chopped garlic
1/2t cayenne pepper
3t ground thyme(or leaf)
6T lemon juice
s&p
12oz tomato paste
3lb cream cheese
Preparation
divide olives through thyme in half, puree batches in food processor w/ lemon. salt and pepper to taste.
when ready for service beat paste and cream cheese into tapenade
for pitas: brush whole wheat pitas w/ olive marinade bake 10 min
