Ingredients
2 - 3 large carrots chopped small
1 onion, chopped small
2 tablespoons fresh ginger minced
1 1/2 tsp curry powder
1/2 tsp cumin
1 tsp garam marsala (or cinnamon, cloves, and corriander)
1 3/4 c veg broth
1 14 oz czn coconut milk (not sweetened)
sea salt to taste
Preparation
saute onions for a minute or so, add carrots then spices then ginger. Add broth and simmer for 20 -25 minutes until carrots are soft.
allow to cool slightly, thn puree in blender in batches.
Return to heat, add coconut milk until well combined.
season generously with sea salt
Serve hot or cold, Soup will thicken as it cools. If serving cold you might want to add more liquid.
