Ingredients

1 package penne pasta

salt for pasta and salt and pepper the sauce to taste

olive oil to coat bottom of pan

1/2 med. onion

2 cloves of garlic

fresh thyme

crimini mushrooms

red and yellow bell pepper

spinach

1/3 cp. cream cheese

8 oz. chicken broth

1/4 cp. white wine (Chenin Blanc)

bleu cheese crumbled to taste

Preparation

Prepare water for pasta, salt to taste, and cook pasta as you prepare the sauce. Heat a high sided skillet, add the olive oil. When the oil is hot add the onion, cook until almost translucent, then add the garlic, bell pepper, saute for about 3 minutes, making sure the garlic doesn’t burn. Add the mushrooms, cook for another two minutes, deglaze with the wine, then add the chicken broth, spinach and thyme. Stir in the cream cheese and bleu cheese, salt and pepper to taste. Use flour to thicken if needed, add pasta and cook until al dente. Garnish with fresh thyme sprig. Also, good with chicken or seafood added and made into one-pot meal.
