Ingredients

1/4 cup olive oil

1 clove garlic, minced

1/4 cup diced yellow onion

1/4 cup diced green bell pepper

1/4 cup diced red bell pepper

5 ripe plum tomatoes, diced

1 whole scotch bonnet pepper

1/4 cup fresh lime juice

2 tsp granulated sugar

1/2 tsp salt

1/4 tsp black pepper

Preparation

  1. Heat the olvie oil over medium heat and add the garlic, onions, peppers , tomato and the whole scotch bonnet chile. Sweat chile for 8 to 10 minutes until tender, but not colored. Add remaining ingredients; simmer for 15 to 20 minutes. Cool to room temp and refrigerate until needed
