Ingredients

1/4 Cup butter

1/2 Cup diced yellow onion

1/2 Cup diced celery

1 Tbsp. minced parsley

2 Tbsp. minced garlic

1/2 tsp. basil leaves

1/2 tsp. cayenne

1/4 tsp. white pepper

1/2 tsp. black pepper

1 1/2 tsp. salt

2-3 Bay leaves

1 tsp. sugar

1/4 Cup chopped green onions

1 28oz. can diced tomatoes

1 15oz can tomato puree

plus water to make 2 cups

3 Cups chicken stock

2 tsp. Crystal hot sauce

Preparation

Melt butter in heavy pot. Add: yellow onion and next 12 ingredients. Cook until bell pepper turns bright green and onion starts to turn transparent. Add remaining ingredients, bring to a boil, reduce heat to simmer, cook 45-60 minutes. Stir occasionally.
