Ingredients

2 Tbsp. olive oil

1 small onion, diced

1 stick celery, diced

1/2 green bell pepper, diced

1/2 red bell pepper, diced

1 cup uncooked long grain rice

1 (14.5 ounce) can chicken broth

1 (10 ounce) can diced tomatoes

1 teaspoon Cajun seasoning, or to taste

1/2 pound peeled large shrimp

1 tablespoon minced parsley

Preparation

Saute chopped onion, celery and bell pepper in oil. Add rice, saute till just beginning to color. Add broth, tomatoes, 1 tsp + Cajun seasoning, salt and pepper. Cover and cook until rice is tender. Add shrimp, cover and cook until done. Garnish with parsley.
