Ingredients

2 Eggs

1 tbsp sugar

3/4 cup milk

1/4 cup water

1/4 tsp salt

1 cup flour

3-4 tbsp olive oil

Preparation

  1. Blend the eggs
  2. Add sugar and blend for 2-3 minutes.
  3. Slowly add milk,water and salt. Blend for another minute.
  4. Add flour.
  5. Add the olive oil
  6. Heat a lightly griddle or non stick pan over a medium-high heat. Pour the batter onto the Pam straight from the blender, using approx 1/4 cup for each crepe.
  7. Tilt the pan with a circular motion so the batter coats the surface evenly.
  8. Cook the Crepes for 2 minutes or until the bottom is lightly brown. Turn and cook the other side.
  9. Serve hot
