Ingredients
1 cup flour
½ cup oats - ground in a food processor
¾ tsp salt
¾ tsp baking powder
½ cup sugar
½ cup brown sugar
10 Tbsp softened butter
1 egg
1 Tbsp vanilla
1 cup chocolate chips
½ cup shaved chocolate (best available chocolate please)
Preparation
Preheat oven to 365 degrees.
Stir together the flour through baking powder.
In an electric mixer, beat sugars and softened butter until light and fluffy.
Add the egg and then the vanilla and mix well.
Then slowly add in the dry ingredients and mix until just combined.
Then stir in the chocolate chips and shaved chocolate.
Use a small scoop or teaspoon to drop small dollops of cookie dough on a greased or nonstick cookie sheet (I use a silpat) about 2 inches apart.
Bake for about 12 minutes, until lightly golden brown.
Cool on a rack.
