Ingredients
3/4 cup croutons
4 skinless, bone-in chicken breasts
1 tbsp. butter, at room temperature
2 tbsp. honey-Dijon mustard
1/2 tsp. dried tarragon
Preparation
Preheat oven to 400F. Place croutons in a plastic bag. Coarsely crush with a rolling pin. Lay Chicken, bone-side down, on a lightly oiled baking sheet. Stir butter with mustard and tarragon in a bowl. Coat chickenn with butter mixture. Sprinkle crushed croutons overtop, then press into chicken. Roast in centre of oven until golden. 35 to 40 minutes.
