Ingredients

1 1/2 pounds large sea scallops (about 12)

1/2 cup panko

2 tsps low-sodium soy sauce

1 tsp curry powder

2 tsps canola oil

lime wedges

Preparation

  1. Pat scallops dry with paper towels. Place panko in dish.
  2. Toss scallops with soy sauce in med bowl, sprinkle evenly with curry powder. Dredge in panko.
  3. Heat oil in a large nonstick skillet over med high heat. Add scallops to pan and cook 2 to 3 mins on each side or until browned. Serve with lime wedges.
