Ingredients
1-2 pounds boneless, skinless chicken breasts - salted and peppered
1-2 cans Rotel tomatoes
1/4 - 1/2 cup diced onion
1 can black beans,drained and rinsed
1 can yellow corn, drained
shredded lettuce
sour cream
guacamole
shredded cheese
Preparation
Layer chicken, diced onion and Rotel tomatoes in a crock pot.
Cook on low for 6 - 8 hours.
Shred chicken with a fork and add the black beans and corn.
Heat and serve on corn tortillas with shredded lettuce, sour cream, guacamole and shredded cheese.
