Ingredients

1 1/2 pound(s) uncooked boneless, skinless chicken breast

15 3/4 oz canned black beans, drained and rinsed

15 3/4 oz canned yellow corn, drained

3 cup(s) Pace Thick & Chunky Salsa

1 cup(s) fat-free chicken broth

2 tbsp taco seasoning mix

1 medium onion, chopped

1 cup fat free sour cream

1 cup fat free cheddar cheese

Preparation

Put everything but the sour cream and cheese in the crock pot. Cook on LOW for 6-8 hours. Turn Crockpot OFF or to WARM and stir in cheese and sour cream. Garnish with scallions (optional). Serve over brown rice, or put in a tortilla, or add additional chicken broth (when finished) and serve as soup! Its also great over baked Tostitos like nachos.
