Ingredients

4 chicken thighs with skin on

1 pkg taco seasoning mix.

1/2 cup chopped onion

1 14 oz can diced tomatoes w/green chilies

1 cup chicken stock.

1/2 cup diced green bell pepper

1/3 cup frozen corn kernals

6 oz colby/jack cheese grated.

Preparation

Mix all ingredients except chicken and cheese. Pour into crockpot. Place chicken pieces on top. Season chicken with salt and pepper and 1/4 tsp each cumin seeds and chili powder.

Cover and cook on low 8 hours Remove chicken from crockpot and place in preheated 200 degree oven on foil. Sprinkle each piece with 3-4 tbs grated colby/jack cheese. warm until chesse melts.

Drain veggies from crockpot. Discard liquid. Serve chicken with veggies on side. Top chicken with dollop of sourcream.
